spinach and shrimp quiche


i don't think i planned this too well!  a few weeks ago when i decided to attempt various quiche recipes, i printed a few out. i didn't have time to make one on sunday so i went to the grocery store last night. i spent about $20 on all the ingredients i think for Emeril's recipe for Spinach and Shrimp Quiche. It called for 2 lbs. of spinach! that's 3 of those salad bags full. 1 lb. of shrimp. swiss cheese, parmasean cheese, onion, cream, eggs.

this is the second time i have made one of emeril's quiche recipes. both times the recipe called for a 9 inch quiche crust and each time i had twice as much filling! last time i threw it away. this time i made two quiches. but that is where I screwed up. I have work lunches for the next two days. so unless i want it all week for dinner, it was a total waste. and of course it was the most expensive one too! maybe i can freeze one. . .

but this one didn't turn out that well. the instructions were to wilt the spinach. i had to make 6 huge pans through to get it all wilted. then i was to squeeze out all the extra water and chop. i squeezed and squeezed it but i couldn't get all the water out! after i chopped it, it was all watery again. i used like 12 bounty towels (the quicker picker upper) and they were all soaked. holy hell. so i just put it in and i think it made it too watery. i ended up cooking it an additional 10 minutes so it would firm up, but when you scoop out the ingredients, it's wet on the inside. bummer. oh well, that's what i try them out for i suppose. OH - it tastes AWESOME!!! so that's the good part. and it's actally really, really healthy.
